Mushroom and Ham Pinwheels

Cook Time 1 hour 30 minutes plus chilling

Serves 4

Ingredients

1 tbsp extra virgin olive oil 

250g Swiss Brown mushrooms, minced in a food processor

2 sheets of frozen puff pastry 

2 cups of freshly grated cheddar 

4 slices of ham, finely chopped

Salt and pepper, to taste

Method

Fry the mushrooms in oil for 10-15 minutes, until the liquid has evaporated and the mushrooms are golden. Season with salt and pepper, then remove from the heat to cool.

Evenly spread the mushroom mixture over each sheet of pastry, leaving a 1 cm border. Sprinkle the cheddar with the seasoning, then lay the ham on top.

Roll the pastry tightly into a log and wrap it in cling wrap. Place in the freezer for 30 minutes until almost frozen. This helps cut into perfect round pinwheels.

Preheat the oven to 190°C and line a large baking tray with baking paper.

Unwrap the pinwheels and cut into 2 cm circles. Bake for 20-25 minutes until golden brown.
