Mushroom and Bacon Muffins

Ingredients

1 tbsp extra virgin olive oil
100g button mushrooms, sliced
250g of bacon, cut into small batons
50g walnuts, toasted
150g mozzarella or Gruyere cheese, cubed

300g plain flour
1 tsp baking powder
Pinch salt
75g butter, melted
250ml milk
2 eggs, lightly whisked

Method

Pre-heat the oven to 180C. Grease a 12 hole muffin tin with oil spray.

In a small pan, heat oil and sauté mushrooms and bacon until golden brown. Cool.

In a large bowl add the flour, baking powder and salt. In another bowl mix the milk, butter and eggs and slowly incorporate into the flour mixture. Add the mushrooms and bacon, the walnuts and cubed cheese. Fold into the batter and pour the mixture into the muffin tin ensuring to fill ¾ of the way.

Bake in the oven for 35-40 minutes.
