Mozzarella and Ham Frittata

Ingredients

500g wagon wheels pasta

2 tbsp butter

400g mozzarella, grated

150g ham, diced

4 eggs

½ cup of thickened cream

½ cup basil leaves, torn in half

1 cup cherry tomatoes, cut in halves

Method

Preheat oven to 180°C.

Take butter and grease baking dish with it.

In a large bowl, beat eggs, cream and gradually adding half the amount of mozzarella. Add tomatoes, basil & ham to egg mix and set aside.

In a pot of boiling salted water, add the pasta and cook as per packet directions.

Strain pasta and add to egg mix and stir.

Pour pasta into baking dish and top with remaining mozzarella.

Bake 15 minutes or until golden.

Remove from oven and allow pasta to cool for 5 minutes.

Serve and enjoy with family and friends!
