Miso Mushrooms

Ingredients

1 tsp olive oil

6 field mushrooms

60g butter, melted

2 tbsp white miso

1 tbsp maple syrup

1 tbsp rice vinegar

2 cloves garlic, minces

1 x 2 cm pieces of ginger, minced

Sesame seeds, to serve

1 long red chilli chopped

3 spring onions, chopped

Rice, to serve

Method

Preheat the grill element in the oven.

Mix together the butter, miso, maple syrup, rice vinegar, garlic and ginger.

Place mushrooms cap side down. Drizzle miso butter over the mushrooms.

Roast under the grill for 5 - 8 minutes or until they are toasty and golden brown.

Remove from the oven and chop into quarters. Serve on rice and sprinkle over chilli, spring onions and sesame seeds.
