Mozzarella (Fior Di Latte, Boccancini)
Cream
Salt
Curd from cow’s milk
Method
To make the stracciatella, tear some fior di latte and bocconcini and combine with the same amount of cream and a pinch of salt. Set aside to use as filling for the burrata.
Pour the boiling water into the curd and use two wooden spatulas to stretch the cheese to make the casing of the burrata.
Take a small handful of the burrata casing and flatten it in your palm and place a couple of spoonfuls of the stracciatella in the middle. Then twist a knot in the top and allow it to cool in the chilled water to set.
