Lunchbox Bites

Ingredients
100g butter, melted
3 eggs
110g (½ cup) caster sugar
150g (1 cup) plain flour
Zest of 1 lemon
Zest of ½ orange
1 tbs. honey
¼ cup Sunbeam seed mix (pepitas, sunflower kernels)
¼ cup Angas Park diced dried apricot
¼ cup Sunbeam dried pineapple
¼ Sunbeam linseed
Method
Pre heat the oven to 200C. Grease patty cake pan.
Beat the eggs and sugar with an electric mixer until thick, fluffy and pale in colour. Slowly sift in the flour and lightly mix. Add zest from orange and lemon, along with the honey. Combine well.
Fold in the melted butter. Combine. Fold in seeds and dried fruit.
Spoon the batter into the moulds, filling up ¾ full and bake in the oven for 10-12 minutes. Remove from the oven and let cool slightly before turning out onto a wire rack.
