Lunch box muesli bars

Ingredients

1 ½ cups oats
1 cup desiccated coconut
1 cup dried fruit medley
½ cup walnuts, chopped
1 ½ tbs. wholemeal flour
1 tsp. cinnamon
120g butter or vegetable oil
5 tbs. honey
Pinch salt

Method

Pre heat the oven to 180C. Line a slice tin 20cm by 30cm (approx.) with baking paper.

In a large mixing bowl combine all the dry ingredients until evenly distributed.

In a saucepan melt the butter and honey and pour over the dry mixture. Add and pinch of salt and with a wooden spoon mix thoroughly.

Spoon into the tin and bake for 30 minutes.

Once cooked, allow to cool in the fridge.

Slice into 8cm x 4 cm bars.
