La Scala Salami Salad

Ingredients
½ head iceberg lettuce, shredded
½ red onion, thinly sliced
200g chub salami, skin removed and diced
1 x 400g can chickpeas, drained and rinsed well
1 tomato, diced
Dressing
1 tbsp Dijon mustard
¼ cup freshly grated parmesan
2 tbsp cup red wine vinegar
3-4 tbsp extra virgin olive oil
1 tsp of dried oregano
Salt and pepper
Method
For the dressing whisk all the ingredients together in a large salad bowl.
Add the tomatoes, lettuce, onion, salami and chickpeas, and toss everything together. Eat immediately.
