Healthy Raspberry Wagon Wheels

Cook Time 20 minutes plus freezing

Servings makes 4

Ingredients

4 thin brown rice cakes

1 tbsp maple syrup

¼ cup of desiccated coconut 

½ cup coconut yoghurt

1 punnet of raspberries 

300g dark chocolate, melted

Method

Use an 8 cm cookie cutter to cut the rice cakes into smaller disks.

Mix together the maple syrup, desiccated coconut and yoghurt. Line a tray with baking paper. Dip one side of the rice cake into melted chocolate and place on the prepared tray, chocolate side down. Spread the rice cake with yoghurt, arrange raspberries so they completely cover the yoghurt and drizzle more chocolate over the top to completely cover the berries. Repeat with the remaining. Freeze for a few hours before serving.
