Healthy Chocolate, Coconut and Cherry Balls

Ingredients
100g glace cherries, roughly chopped (could also use 100g fresh pitted cherries, roughly chopped)
10 dates, pitted, roughly chopped
1 – 1½ cups almond meal
¼ cup raw cacao powder
¼ cup desiccated coconut + extra ⅓ cup, to coat
¼ cup sunflower seeds
2 tbsp chia seeds
1 tsp ground cinnamon
Pinch of sea salt
3 tbsp coconut oil, melted, cooled
Method
Place the cherries, dates, almond meal, cacao powder, coconut, seeds, cinnamon and salt in the bowl of a food processor. Blend briefly until combined. Add coconut oil and pulse 2 to 3 times until well combined.
If the mixture is too wet add some extra coconut or if too dry, add a little water.
Roll the mixture into tablespoon sized balls and place on a tray lined with baking paper.
Place the extra coconut onto a large plate and roll each ball in the coconut, ensuring each ball is evenly coated.
Store balls in an airtight container and refrigerate to firm up.
** You can use any combination of seeds and nuts you like – you could also roll the balls in extra cacao powder or finely chopped cacao nibs
