Ham & Egg Bites

Ingredients

12 slices ham

1 cup mozzarella cheese, shredded

6 large eggs 

½ tsp garlic powder

1 tsp Italian herbs

1 tsp salt 

½ tsp freshly cracked black pepper 

Parsley, to garnish

Olive oil spray

Method

Preheat the oven to 180°C and grease a 6-hole muffin tin with olive oil spray.

Place two slices of ham in each muffin hole and press down. Depending on the size of the slice you will have high edges of ham overhanging the sides.

Sprinkle mozzarella cheese into the bottom of each muffin, flattening slightly.

Crack one egg into each muffin cup and season with garlic powder, Italian herbs, salt and pepper, and bake for 15 minutes or until eggs are set to your preference.

Remove from the oven and cool for five minutes before demoulding. Garnish with parsley.
