Grilled Skirt Steak Smoked BBQ Glaze

Ingredients

1 tbsp extra virgin olive oil

600g piece of skirt steak, brought out of the fridge 40 minutes before cooking

Salt and pepper

Sauce

1 tbsp extra virgin olive oil

3 cloves garlic, minced

1 ½ cups tomato sauce

¼ cup brown sugar

¼ cup apple cider vinegar

2 tbsp Worcestershire sauce

1 tbsp chilli sauce

1 ½ tsp smoked paprika

Method

For the sauce, heat oil in a medium saucepan and add the garlic. Once it has started to change colour, add the remaining ingredients. Bring to the boil and then turn the heat down and simmer for 15 minutes.

Heat a large griddle pan over a high heat. Oil and season the steak with salt and pepper. Grill on each side for 4-5 minutes and then rest for another 5 minutes before slicing thinly.

Serve with the BBQ sauce and your favourite sides.
