Green Olive, Herby, Gluten Free Spaghetti

Ingredients
1 packet gluten free spaghetti
¼ cup extra virgin olive oil
½ cup Sicilian Green olives, pitted
3 garlic cloves, sliced thinly
½ bunch flat leaf parsley, chopped finely
¼ cup mint leaves, torn
½ cup basil, leaves
1 green chilli, sliced thinly 1 lemon, zested & juiced Salt & pepper
Method
Cook pasta as per packet directions in a pot of salted boiling water.
Heat the olive oil in a pot on medium heat. Add the garlic and chilli and cook for 3 minutes.
Add parsley and half the amount of basil to the pot. Cook for a further 2 minutes.
Next add olives, lemon zest & juice to the pan and ½ cup of the pasta water. Simmer for 2 minutes.
Remove pasta from water, add to the pot and combine well.
Turn off heat and mix in mint & basil, and season with salt & pepper.
