Ingredients

250 ml water

75g butter, chopped

4 free range eggs

80g Gruyere or Cheddar, grated

150g sifted Lighthouse Cake, Sponge & Steamed Bun Self Raising Flour

Pinch of salt

Pinch of nutmeg

Simple, savoury, delicious.

Method

Preheat the oven at 180°C.

In a saucepan, put together the water, butter and salt and bring to boil. Remove pan from the heat then add the flour all at once and mix thoroughly. Continue mixing over a low heat for about 1 minute or until a light crust forms at the bottom of the pan.

Let it cool for a minute or so then add one egg at the time, mixing well between each egg addition. Add the cheese and mix well.

Line a baking tray with baking paper and either use a piping bag or 2 teaspoons to form 20 cent piece sized mounds of pastry leaving 3 cm between each because they will spread. Sprinkle nutmeg over the pastry.

Bake for 25 minutes.
