Golden Kiwifruit Breakfast Bars
Cook Time 1 hour plus cooling time
Servings 4-6
Ingredients
1½ cup wholemeal flour
1 cup rolled oats
¼ cup desiccated coconut
¾ cup of brown sugar
1 tsp baking powder
½ tsp bicarbonate soda
Pinch of spice of your choice (I like cinnamon, ground cardamom or nutmeg)
150g butter, cold and cut into cubes
Gold Kiwifruit Filling
4 gold kiwifruits, peeled and chopped
2 tbsp caster sugar
Juice and zest 1 small lemon
2 tbsp cornflour
Method
To make the gold kiwifruit filling, place all the ingredients into a bowl and mix. Put to one side until ready to use.
Preheat the oven to 180°C. Grease and line a slice dish with baking paper.
Place the flour, oats, brown sugar, baking powder, bi carb soda, a pinch of salt, spice and butter into a food processor and pulse until a crumb forms.
Press half of the mixture into the slice dish and press down so it’s even. Bake in the oven for 15-20 minutes, then remove. Spread the gold kiwifruit filling evenly over the biscuit base. Sprinkle over the remaining mixture so it completely covers the kiwi fruit. Return to the oven for a further 20-25 minutes or until golden.
Cool completely before removing it from the dish. Slice into breakfast bars.
