Garlic Prawns

Cook Time 20 minutes

Serves 4 (to share)

Ingredients

6–8 whole raw prawns, shells on, heads removed 

4 garlic cloves, finely chopped

1 tbsp olive oil

30g butter

Pinch of chilli flakes 

Zest and juice of ½ lemon

2 tbsp chopped parsley

Salt and freshly cracked black pepper

To Serve

Fresh sourdough or crusty bread, to serve

Method

Heat a large frying pan over a medium-high heat. Turn the heat down to medium and add the olive oil.

Add the prawns and cook for 2–3 minutes on each side until they change to a bright orange colour.

Add the butter, followed by the garlic and chilli flakes. Cook gently for about 30 seconds until fragrant.

Remove from the heat and add lemon zest, a squeeze of lemon juice, parsley, salt and pepper. Toss everything together in the pan.

Spoon the garlicky butter over the prawns and serve immediately with crusty bread to mop up the sauce.
