Garlic and Chilli Prawns

Ingredients
120ml extra virgin olive oil
1 long red chilli finely chopped
4 garlic cloves, crushed and finely chopped
1 kg extra-large king prawns, shelled and deveined with tails intact
80ml white wine
2 parsley sprigs, stalks and leaves finely chopped
1 lemon, zested
Sourdough bread, to serve
Salt & pepper
Method
Heat a sauté pan over medium heat and add the oil, chilli and garlic. Toss and cook for a minute until fragrant, being careful not to burn. Add the prawns, swirl the pan to coat the prawns in the flavoured oil, then add wine. Once reduced by 1/3, remove the pan from the heat. Add the salt and pepper, parsley and lemon zest and serve immediately with the bread and lemon wedges.
