Fried Tofu Noodles

Ingredients

3 tbsp peanut oil 

2 cloves garlic, chopped

1 bunch Chinese broccoli, chopped

200g firm tofu, cubed 

200g fresh rice noodles, noodles separated

2 eggs, whisked

Pinch vegetable stock powder

Chilli, chopped to serve 


Sauce

2 tbsp vegetarian oyster sauce 

2 tbsp dark soy sauce 

1 tbsp sesame oil

1 tsp sugar 

1 tsp white vinegar

Method

Heat oil in a large wok over a high heat. Add the tofu and stir fry before adding the garlic, noodles and broccoli and tossing again.

Add the sauce and coat the noodles. Then add the egg and toss to roughly scramble. Season with a pinch of stock powder. Garnish with chilli.
