Fresh Fish Salad - Hinava

Ingredients
200g mackerel, thinly sliced
2 cups lime juice
2 long red chillies, thinly sliced
2 bird eye’s chillies, thinly sliced
2 shallot, sliced
Knob of ginger, grated
½ bitter gourd, seeds removed and thinly sliced
Salt
Method
Combine all the ingredients in a bowl, except for the bitter gourd. Stir for a few minutes until the fish changes colour. Then, add the bitter gourd and serve.
