Cottage Cheese, Salmon & Cucumber Rolls

Cook Time 10 minutes

Servings makes 20 rolls

Ingredients

150g cottage cheese

Zest of lemon

2 sprigs of dill, chopped

1 tbsp capers

2 slices smoked salmon

3 Lebanese cucumbers, sliced lengthways with a mandolin

Salt & pepper, to taste

Method

Blend together the cottage cheese, lemon zest, dill, capers, smoked salmon and a pinch of salt and pepper.

Spread a thin layer of mixture on each of the cucumber slices, roll and place on a serving plate.
