French Toast Fingers with Berries

Cook Time 15 minutes

Servings 4

Ingredients

3 eggs

2 tbsp raw sugar

½ cup milk

Pinch of cinnamon 

3 brioche buns, sliced into 2-3 cm pieces 

1 knob butter

1 tsp olive oil 

Yoghurt, to serve

Blackberries, cut into halves, to serve

Raspberries, to serve

Maple syrup, to serve 

Method

In a bowl mix the eggs, milk, cinnamon and sugar together.

Melt the butter and oil in a frying pan over a medium heat. Dip the slices of bread into the egg mixture, shaking off the excess and place into the pan. Cook for 1-2 minutes on each side until golden.

Stack on a plate and top with berries, yoghurt and a drizzle of maple syrup.
