Falafel Lettuce Cups

Ingredients

2 tbsp olive oil

8 herb falafels

1 small baby cos lettuce, leaves separated & trimmed 

½ cup hommus

¼ cup pickled red cabbage

Mint and coriander, to garnish (optional)

Method

Heat the oil in a pan over a medium. Place the falafel in the pan and cook for 90 seconds on both sides.

Add a dollop of hommus to each lettuce leaf, top it with the warm falafel and some pickled cabbage. Garnish with mint and coriander if desired.
