Easy Roast Loin of Pork

Ingredients
1.2kg Pork loin roast, tied and scored
1 tbs extra virgin olive oil
1 ½ tbsp salt
Justine shows how to prepare and roast a pork loin to make delicious crackling!
Method
Remove meat out of the fridge 30 minutes before cooking and pat the skin dry with paper towelling.
Pre heat the oven to 220°C.
Rub the skin with the oil and salt and place pork on a rack in a large tray. Bake in the oven for 15 minutes.
Now Turn the oven down to 180°C and roast for a further 25 minutes. Remove from the oven and rest for 15 minutes uncovered.
Cut into think sliced and serve with the crackling and your favourite sides.
