Dezi’s Greek Potato Salad

Ingredients
2 calamari, cleaned (wings and tentacles reserved)
1kg brushed potatoes
⅛ cup fresh oregano
¼ cup flat leaf parsley (leaves only)
½ cup olive oil
Juice of 1 lemon
8 kalamata olives to garnish on top
1 long red chilli, sliced
Lemon wedge, to serve
Pinch of salt & cracked black pepper
Method
Peel and wash potatoes. Cut into quarters/large chunks.
Add to cold salted water and bring to a boil until potatoes are cooked.
While you are waiting for the potatoes to cook, add the oregano, parsley, olive oil, and lemon juice together and blitz.
Coat the calamari in olive oil and grill to your liking.
Strain potatoes in a colander and shake well.
Add potatoes to a bowl and season with salt and pepper. Add dressing and gently toss to coat.
Serve the potato salad with calamari aside, top with kalamata olives, chilli and a drizzle of olive oil to garnish. Serve with a lemon wedge on the side.
