Air fryer Grilled Fillet of Beef

Ingredients

1 tsp olive oil

1.5kg centre-cut fillet of beef roast, tied with butcher’s string

Sweet potato and cashew dip or your homemade puree, to serve

Kale, blanched to serve

Pinch of salt

Method

Bring the beef out of the fridge 1 hour before cooking and pat dry. Lightly oil and season beef all over with salt.

Place the grill plate into the air fryer and preheat to 200°C. Add the beef to the basket and cook for 15-20 minutes or until your liking.

Remove, rest and then slice into medallions.

Serve with sweet potato puree or dip and wilted kale.
