Detox Salad with Avocado and Ginger Dressing

Ingredients
4 leaves of kale, finely shredded
½ bunch mint, leaves picked
4 radish, finely sliced
1 Lebanese cucumber
½ a pomegranate
½ a cup Pepitas, toasted
Dressing
1 avocado
1 tsp. ginger finely minced
Juice of ½ lemon
4 tbs. olive oil
1 tbs. water
Salt and pepper
Method
For the dressing, blitz all of the ingredients in a small blender until smooth and creamy.
Combine all of the salad ingredients together. Toss the salad with the dressing just before serving.
