Date and Vanilla Caramel

Cook Time 20 minutes

Makes about 1½ cups

Ingredients

10-12 medjool dates, pitted 

1 tsp vanilla bean extract

¾ cup nut milk of your choice

Pinch of salt


To Serve

Muesli, chia pudding or yoghurt

Method

Soak dates in hot water for 15 minutes, then drain and add to a blender along with all the other ingredients. Blend until smooth and thick, just like caramel. 

Drizzle over muesli, chia pudding or yoghurt.
