Curried Sausages

Serves 4

Ingredients

6 beef sausages

30g butter 

1 brown onion, sliced

2 carrots, sliced

2 tbsp plain flour

1 tbsp curry powder (adjust to taste)

2 cups beef stock

1 tsp Worcestershire sauce

1 cup frozen peas

Salt and pepper, to taste

Method

Bring water to a simmer. Add the sausages and poach for 5 minutes. Drain and cool. Once cool enough to handle, peel the skin off and slice the sausages into 1cm rounds.

To make the sauce, melt the butter in a sauté pan over medium heat. Add the onion and carrots, then sauté for 5–8 minutes, or until softened.

Sprinkle in the flour, then add the curry powder and cook for 30 seconds until fragrant. Gradually pour in the stock, stirring well to avoid lumps. Add the Worcestershire sauce and sliced sausages, then simmer for 10–15 minutes until the sauce has thickened and the sausages are cooked through.

Stir in the peas and cook for 1 more minute. Season with salt and pepper to taste.
