Creamy Dragon Fruit Ice Blocks
Cook Time 15 minutes plus overnight freezing

Ingredients
400g frozen pink dragon fruit, thawed
5g (1 tsp) xanthan gum
100g white chocolate, chopped
1 tsp vanilla extract
300g thickened cream, lightly whisked
300ml condensed milk
Method
Blend the dragon fruit and condensed milk until smooth. Place into a pot and warm over medium heat for a minute. Add a tablespoon of the dragon fruit puree to the xanthan gum and mix to dissolve then pour into the pot and mix through. Blend one more time to ensure there are no lumps.
Fold the whipped cream and dragon fruit mixture together and then fold through the white chocolate and vanilla extract. Place the mixture into the jug, and pour into icy pole moulds and insert the wooden sticks.
Freeze for 6 hours or overnight until set.
