Corn Fritters

Ingredients

⅓ cup olive oil, for shallow frying

¾ cup self-raising flour

½ tsp onion powder

½ tsp garlic powder

1 egg

⅓ cup milk

2 cups frozen corn kernels, thawed drained and dried (or fresh)

¾ cup cheddar

½ bunch chives, chopped (reserve 2 tbsp for garnish)

Crème fraiche or sour cream, to serve

Method

Combine the flour, onion and garlic powder in a mixing bowl with a pinch of salt. Make a well in the centre and whisk in the egg and milk. Add the corn, cheddar and chives and fold through.

Heat oil in a large pan over a medium. Add spoonfuls of fritter batter and fry for a minute or so on each side or until cooked through. Serve with a dollop of crème fraiche and extra chives.
