Chocolate ‘Chips’ with Strawberry Salsa

Ingredients

Chips

100g vanilla milk chocolate, tempered

Salsa

Strawberries, finely diced

Touch of golden caster sugar

(optional - some black pepper or little basil makes for an intriguing addition)

Chantilly Cream

Cream

Touch of sugar to taste 

Vanilla bean paste 

Method

For the chips, temper the chocolate and either create very thin disks or place onto a sheet of acetate plastic, top with another and using a rolling pin, spread to create a thin layer. Place the chocolate in the fridge to set.

For the salsa, place the chopped strawberries into a serving bowl and mix with a little sugar to taste.

This will also draw some moisture from the strawberries.

Lightly whip the cream with the sugar and vanilla and place into a small serving bowl.

To serve, gently peel back the sheet of the chocolate and break into random sizes.

Serve alongside the cream and salsa.

Get your guests to top the chocolate with some cream and salsa.

The contrast of rich, firm chocolate with the cool cream and the fruit is a delight.

Also wonderful with some cherries instead strawberries and for this, add a splash of Kirsch to the cream.

It creates a stunning Black Forest-style bite.
