Chinese Style Bolognese

1 packet vermicelli egg noodles

350g beef, chicken or pork mince

½ bunch of spring onions, finely chopped

2 garlic cloves, chopped

1 tsp ginger, chopped

2 tbsp vegetable oil

1 cucumber, julienned

½ cup coriander

8 prawn crackers

For the sauce

¼ cup chicken stock

1 tbsp chilli bean sauce

1 tbsp Chinese sweet bean sauce

1 tbsp dark soy

2 tbsp rice vinegar

Chinese Style Bolognese


Combine all the sauce ingredients together in a bowl.

Cook noodles as per packet directions.

Heat oil in a wok on medium heat. Add the onion and cook for 1 minute, next add garlic & ginger and cook for a further minute.

Place mince into wok and cook, breaking it up as you go and cook until browned.

Add sauce and cook for 3-5 minutes, or until the sauce has reduced by half.

To serve, place noodles into bowls, top with bolognese, place cucumber & prawn crackers on the side, and garnish with coriander.
