Chinese Honey Prawns

Ingredients
500g large prawns, peeled and deveined, tail intact
1 cup self-raising flour
¼ cup cornflour
1 egg
1 cup soda water, chilled
Oil, for deep frying
Honey Glaze
¼ cup honey
1 tbsp light soy sauce
1 tbsp white vinegar
1 tsp sesame oil
To Serve
Sesame seeds, to garnish
2 spring onions, finely chopped
Method
Combine the self-raising flour and cornflour, then add a pinch of salt.
Make a well in the centre and whisk in the egg, then add the soda water until you have a smooth batter with a consistency similar to thick cream. Don't overmix.
Preheat oil in a wok or pot to 180°C.
Dip the prawns into the batter, allowing excess to drip off. Deep-fry for 2–3 minutes, until golden and crisp. Drain well on a rack or paper towel.
In a wok, combine the honey, soy sauce, vinegar and sesame oil. Bring to a simmer for 1–2 minutes until slightly thickened.
Add the fried prawns and toss quickly until evenly glazed.
Serve immediately, sprinkled with sesame seeds and spring onions.
