Cheese Beignets

Ingredients

Vegetable oil, for frying 

125ml water

40g butter

100g plain flour 

2 eggs

50g freshly grated gruyere or cheddar

Pinch salt

Method

In a saucepan, place the water, butter and salt and bring a boil. Remove the pan from the heat and then add the flour all at once and mix thoroughly. Continue mixing over a low heat for about 1 minute or until a light crust develops at the bottom of the pan.

Let the dough cool for 1-2 minutes then transfer it to a mixing bowl. Add one egg at a time, whisking well between each egg addition. Add the cheese and mix well. Transfer mixture to a piping bag.

Heat oil in a pot to 180°C. Carefully press the dough out of the piping bag and, using scissors, snip 4 cm logs of dough into oil. Do this in batches and fry until golden brown. Drain on paper towel.

Serve with a sprinkle of extra cheese, salt and pepper.
