Cheat's Coconut Cheesecake

Cook Time 20 minutes plus chilling time

Serves 4

Ingredients

12 thin coconut biscuits or Biscoff biscuits 

1 cup plain Greek yoghurt 

½ cup coconut milk 

1 tsp vanilla extract

Zest of a lime

1 punnet of berries 

1 tbsp maple syrup

Method

Combine the berries and maple syrup in a small pot and bring to a boil. Cook for 5 minutes until the berries just start to break down and release their juices. Turn off and cool.

Combine the yoghurt, coconut milk, vanilla extract and lime zest. Divide the berries between 4 glasses, then fill each with yoghurt, being careful not to fill more than ¾ of the way up. Add 3-4 biscuits to the yoghurt, side by side. Chill for 3-4 hours or overnight before serving.
