Candied Vanilla Sweet Potato

Ingredients
1 large sweet potato, peeled and cubed into 3 cm pieces
50g butter
½ cup brown sugar
¼ cup maple syrup
1 tsp Chinese 5 spice
1 tbsp vanilla extract
Pinch of salt
Method
Preheat the oven to 180°C.
In a pot melt the butter, then add brown sugar, maple syrup, Chinese 5 spice and vanilla extract. Stir to combine.
Add the sweet potato to a large baking dish, coat in the warm mixture, season with salt and place in the oven covered with foil for 20 minutes, then remove the foil and cook for another 30 minutes or until caramelised.
