Burger Tacos

Cook Time 30 minutes

Serves 4

Ingredients

800g beef mince

8 small flour tortillas

Salt and black pepper, to taste

1 tsp olive oil

8 slices American burger cheese

Sauce

½ cup whole-egg mayonnaise

2 tbsp finely diced dill pickles plus 1 tbsp of the pickling liquid

½ an onion, very finely diced; reserve half to garnish

1 tbsp yellow mustard

1 tsp white vinegar

1 tsp paprika

½ tsp garlic powder

To Serve

2 cups shredded iceberg lettuce

1 dill pickle, sliced

Method

Mix all the sauce ingredients together. Add only half the diced onions. The rest is for garnish.

Divide beef into 8 equal portions. Press a thin layer of mince over one side of each tortilla, right to the edges. Season generously with salt and pepper and brush with olive oil.

Heat a large pan over medium-high heat. Place tortillas beef-side down. Cook for 1–2 minutes until the beef develops a deep brown crust. Flip and cook tortilla-side down for 1 minute. Cooking in batches is recommended.

Turn tortillas back and top each with a slice of cheese. Cover with a lid and let it melt for a few seconds. Remove.

Drizzle over some of the sauce, add shredded lettuce, diced onion and pickle slices.
