Buffalo Wings

Ingredients
Vegetable oil, for deep frying
1kg of chicken wings, separated at the two joints
1 cup plain flour
1 tbs garlic powder
Salt
Buffalo Sauce
½ cup hot sauce
50g unsalted butter
1 tbsp white vinegar
To serve
Blue cheese sauce
Celery sticks
Method
Half fill a wok with oil halfway up and to 180°C.
Mix flour and garlic powder together with a good pinch of salt. Add wing and coat in flour. Dust off the excess flour. In batches fry the wings for 5-8 minutes until cooked through and golden. Darin on a wire rack. Alternatively, after dusting, spray with a little oil and air fry or bake the wings at 190°C for 25-30 minutes.
In a small saucepan over low heat, melt butter. Stir in the hot sauce, vinegar and a pinch of salt.
Simmer for a couple minutes until well combined then pour into a bowl. Place cooked wings into sauce and toss until fully coated. Serve with blue cheese sauce and celery sticks.
