Borlotti Beans

Ingredients

2kg fresh borlotti beans, shelled

3 cloves garlic, bruised

1 ripe tomato, cut in half

3 sprigs thyme

2 fresh bay leaves

Salt and pepper

Good quality balsamic vinegar

Extra virgin olive oil, to serve

Method

Cover the borlotti beans with water, garlic, tomato, add the thyme, bay leaves and cook for 45 minutes to 1 hour until the beans are creamy and tender.

Season generously with salt and a touch of pepper. Use a slotted spoon to remove beans. Drizzle over balsamic and olive oil and serve warm as is with bread or with a roast.
