Blistered Tomatoes

Cook Time 20 minutes

Ingredients

2 x 350g cherry tomatoes

2 sprigs of thyme 

3 cloves of garlic, slivered

3 tbs extra virgin olive oil 

Pinch salt

To Serve 

Grilled fish or toast (optional)

Method

Preheat the oven to 160°C.

Add the cherry tomatoes, extra virgin olive oil, garlic, thyme and a pinch of salt to a tray.

Cook for 20 minutes until lightly blistered.

Serve warm with a piece of grilled fish or simply on toast.
