Blackberry Mocktail

Cook Time 10 minutes + freezing time

Servings 4

Ingredients

2 punnets of blackberries 

3 tbsp caster sugar 

Zest of 1 lemon 

800ml ginger beer

Soda water, for topping up  

Ice, to serve

Method

Freeze 1 punnet of blackberries for 1 hour or overnight. 

Place the remaining berries into a jug with the sugar and lemon zest. Using a rolling pin, crush the berries and sugar to macerate to extract as much juice as possible. 

Add ice to highball glasses. Using a fine sieve, strain the juice evenly into the glasses. Top with the ginger beer and a splash of soda water and garnish with frozen blackberries.
