Black Bean Fried Noodles

Ingredients

3 nests of rice noodles

2 tbsp peanut oil 

4 spring onions, cut into 3cm batons

2-3 tbsp black bean sauce

Method

Boil noodles according to packet instructions. Drain, reserving a splash of the cooking water.

Heat the peanut oil in a wok, then fry the spring onions until softened and caramelised. Add the noodles. Once sizzling, add the black bean sauce and stir-fry for 1 minute to coat the noodles.
