Bitter Melon Omelette in Bahn Mi

Ingredients
3 eggs, whisked
1 baby bitter melon, thinly sliced
1 red Thai shallot, finely diced
80ml vegetable oil
5g Salt
To Serve
Bahn Mi Roll
Cucumber, thinly sliced
Coriander
Soy sauce
Method
In a hot small frypan with oil add bitter melon for 1 minute.
Add shallots for 30 seconds, and then add the whisked eggs with salt into the pan. Mix egg around in the pan for 30 seconds to cook evenly and flip over half of the omelette.
Place in the bahn mi together with the cucumber, coriander and soy sauce. Serve and enjoy!
