Berry Vol-au-vent

Cook Time 20 minutes

Servings 6

Ingredients

6 medium store-bought Vol-au-vent (or make them yourself, my recipe can be found on the EG website) 

200g thickened cream

¾ cup icing sugar, sifted

1 tsp vanilla bean paste

Zest of 1 lime

125g of fresh raspberries, to serve

125g of fresh blackberries, to serve 

Method

In a bowl, whisk the thickened cream, icing sugar, vanilla paste and half of the lime zest until stiff peaks form. 

Spoon the mixture into each of the vou-la-vent pastries. Top with berries and extra lime zest.
