Beef and Bean Udon Noodles

Ingredients
1 tbsp peanut oil
400g rump steak, thinly sliced into strips
1 onion, thinly sliced
1 x 3-4 cm piece of ginger, cut into thin strips
1 tbsp curry powder
400ml coconut milk
60ml light soy sauce
3 tbs honey
400g green beans, cut into thirds
400g udon noodles
1 handful of toasted peanuts, to garnish

Method
Cook the noodles as per the packet instructions.
Heat oil in a wok over high heat. Sear the steak strips until coloured and then remove from the wok. Add the onion and ginger and stir fry for 30 seconds, then add the beans and stir fry for a further 30 seconds.
Add the curry powder, stir through and pour in the coconut milk. Bring to a boil, then add the soy and honey, followed by the beans. Cook for 2-3 minutes, then add noodles and beef strips. Toss everything together.
Serve with a garnish of toasted peanuts.
