Banana & Apple Bread

Ingredients

80ml skim milk

215g banana, finely mashed

70g egg whites

60g caster sugar

10g honey

10g chia seeds

2g ground cinnamon

280g self-raising flour

10g wheat bran (or wheat germ)

180g canned diced apple, drained

Method

In an electric mixer combine skim milk, mashed banana, egg whites, caster sugar, honey chia seeds & cinnamon. Mix at a low speed for 1–2 minutes until all ingredients are well combined. Sprinkle in the wheat bran & self-raising flour a little bit at a time whilst mixing until completely incorporated. Mix for a further 1 – 2 minutes at a low speed ensuring all ingredients are well combined. Finally, gently fold the drained diced apple evenly into the mix.

Pre-heat oven to 180°c.

Evenly distribute the batter into a non-stick lightly greased 7cm Deep, 10 x 20cm (base measurement) loaf tin. Bake for 50 minutes or until a skewer inserted into the centre comes out clean.

Remove Loaf from the baking pan and place on a wire cooling rack and cool. Slice into 10 x 2cm slices (approx.) and serve.
