Banana and Oat Waffles with Blueberries

Ingredients

2 ripe bananas, mashed

1 egg 

¾ cup milk

40g butter, melted

1 tsp vanilla extract

1½ cups rolled oats (blended to form flour)

1 tsp baking powder

Pinch of salt

1 punnet of blueberries 

Maple syrup, to serve 

Greek style yoghurt, to serve

Method

Preheat and grease a waffle iron.

Combine the banana, egg, milk, butter and vanilla together in a large bowl. Add rolled oats flour, baking powder and salt and fold through to make a thick batter.

Place a ladle of mixture into preheated and greased waffle iron. Cook for 1-2 minutes or until golden brown. Top with blueberries, yoghurt and maple syrup.
