Baked Scallops with Herbed Butter

Ingredients

12 scallops (preferably with their shells)


Butter Crust 

120g butter, softened

1 tbsp Dijon mustard

1 French shallot, finely chopped

3 sprigs of parsley, finely chopped

50g panko bread crumbs

Salt & pepper

Lemon, to serve

Method

Preheat the grill element in the oven. 

Place all the butter crust ingredients into a bowl and with the back of a spoon squish together to combine.

Place the scallops in their shells on a bed of rock salt in a baking dish. Dollop butter crust on top and bake in the oven for 2 - 4 minutes or until bubbly and golden brown. Serve as an entrée with a wedge of lemon.
