Baked Red Wine Camembert

Servings 4-6

Ingredients

1 x 250g box of Fromager des Clarines or any other matured soft rind cheese

¼ cup Port

1 cup of red wine

½ whole clove garlic

2 sprigs of parsley, leaves picked and finely chopped

1 sprig of thyme, leaves removed and finely chopped

Baked Red Wine Camembert: A surprisingly easy to make gourmet snack dish.

Method

In a small saucepan bring the wine to the boil and reduce by half. Cool to room temperature.

Pre heat the oven to 200C.

Remove the wooden lid from the cheese and lightly wipe the garlic over the top of the cheese.

With a sharp knife make 10 incisions into the wheel of cheese. Pour ½ of the wine over the cheese and allow to absorb.

Add the remaining wine and sprinkle over half of the herbs. Place of a baking tray and bake for 10 minutes. Remove and sprinkle the remaining herbs on top.

Serve on a cheese board with your favourite breadsticks, crackers, grapes and blanched cauliflower florets.
