Baked Potato with Tuna and Cheddar

Ingredients

4 medium sized potatoes, suitable for baking – scrubbed but not peeled.
185gm tin Italian style Sirena tuna, drained
200 g tasty cheddar cheese, grated
2 spring onions, finely chopped
Salt and pepper

Method

Preheat oven to 200 degrees C.

Place potatoes on a tray in the oven and bake for one hour, or until soft.

While the potatoes are cooking, prepare filling.

Combine tuna, spring onion, cheddar cheese, salt and pepper.

Cut the potato open, and fill with tuna mix, and bake for a further 5 minutes.

Perfect with mixed salad, barbeque, or great on its own.
